Do Not Boil the Honey in Your Tea
A lot of honey tastes like plain sugar for one reason: it went into water that was still boiling. The sweetness stays. The smell that made you buy this jar does not.
Our jars are raw. We strain out wax and debris, then stop. That is the same line we use in the note on real honey. Aroma and some enzymes are not built for a rolling boil. You can still sweeten a drink. You just have to wait a minute.
The method
- Brew the tea, ginger, or lemon water the way you already do.
- Wait until you can take a sip without burning your mouth. If you can hold the cup comfortably, the honey can go in.
- Stir, taste, then add more. Honey is sweeter once it is not being cooked off the surface.
That is the whole trick. There is no special spoon and no timer app. If the drink is still steaming hard enough to fog your glasses, it is early.
Which jar belongs in which cup
Wildflower
Wildflower is the tea honey. Black tea, ginger tea, and lemon water that has cooled all suit it. It sweetens the cup and leaves a light floral edge instead of taking over.
Jungle
Jungle is the stronger cup: ginger, turmeric, lime, anything with a bit of chili. The deeper, woodsy note survives when wildflower would disappear.
Jelly
Jelly honey is a poor swimmer. It is dense and slow. Eat it from the spoon, or stir a small amount into a warm drink and give it time. It will not vanish in five seconds, and it should not. If the gift of the jar is the texture, do not dissolve all of it.
Coffee
Use wildflower, and add it after the coffee is cool enough to drink. Start with half a teaspoon. A heavy hand turns the cup into dessert, which is fine once, and tiring every morning.
If the honey is solid
Set honey still works. Soften the jar in warm water first, with the lid on, or drop a lump into the cup and stir longer. The steps are in why Bali honey crystallizes. Do not microwave a lump to save thirty seconds.
One safety line
Do not give honey to infants under 12 months. Honey can carry bacterial spores that a baby's gut does not handle well. That is ordinary public-health advice, not a claim about our jars versus anyone else's. For everyone older, a spoon in a cooled drink is a normal way to use it.
Wait until you can sip the cup. Then stir the honey in. You bought the smell as well as the sweetness.
