Set Honey Is Still Good: Five Ways to Use a Solid Jar
A solid jar is not a lost jar. You can soften it, or you can use the set texture on purpose. Softening is covered in why Bali honey crystallizes. This piece is for the days you leave it grainy and eat it that way.
1. Spread it on warm toast
Warm bread softens the crystals as you spread. Wildflower is the easiest here. Jelly is thicker and needs a patient knife.
2. Stir a lump into cooled tea
Do not boil the cup first. Wait until you can sip, then stir. That rule is the same as how to sweeten drinks with honey. A solid lump takes longer to dissolve. That is fine. Keep stirring.
3. Rub it into yogurt
A spoon of set wildflower or jungle honey into plain yogurt. The grains give a little crunch. Add fruit if you want. Do not melt the honey into a syrup first unless you prefer it smooth.
4. Finish grilled fruit
Cook the fruit, then brush or spoon a little honey on at the end. Set honey still works if you warm a spoonful in your hands or against the hot fruit. The longer cooking note is in three kitchen uses.
5. Soften only what you need
Scoop a few spoonfuls into a small bowl. Stand that bowl in warm water. Leave the main jar closed. You get a pour for tonight without rewarming the whole batch every morning.
When not to keep it
If it smells like beer, wine, or vinegar, or if it keeps fizzing, that is fermentation, not crystals. Storage rules are in keeping honey through rainy season. When you are unsure, replace the jar.
