Honey Behind the Bar: A Simple Note for Bali Cafés
Ni Made Suartini
If honey sits in a squeeze bottle next to syrups that never change, guests stop tasting it. A raw jar behind the bar is different. It needs a dry spoon, a lid, and a barista who does not pour it into boiling milk.
Which jar for drinks
- Wildflower for tea, lemonade, and most coffee drinks. Light enough that the drink still leads.
- Jungle for ginger, turmeric, or anything with spice. The deeper note survives.
- Leave jelly for spoon service or a dessert plate. It is a poor match for a busy espresso rush.
Bar rules that matter
- Add honey after the drink is off the boil. The tea post is the same idea: do not boil the honey.
- Use a dry spoon or a dedicated pour. Wet tools put water in the jar.
- Close the lid between tickets. Steam from the wand is still moisture.
- If the jar sets solid, warm the closed jar in warm water, or scoop what you need. Do not microwave it.
How cafés order
Contact us with weekly volume and delivery area. The website form is built for home orders. A café needs a standing conversation so we do not undersupply a menu launch.
Ask us what we can say on a menu. We would rather give you a true line about raw honey from keepers we know than a certificate we do not have. That matches our story.
Jars are IDR 100,000 each at retail. Wholesale depends on quantity. Message us before you print the board.
